The latest Rio venture from the high-profile Brazilian chef Felipe Bronze sees him apply his culinary wizardry to traditional boteco cuisine. The down-to-earth design features white walls and standard-issue boteco tables and chairs. But the food that emerges from the open kitchen is anything but standard. Neat tricks include a version of the traditional thick bean soup that here comes topped with a luminous green froth of couve (collard greens).Don’t miss the chunky aipim (manioc) fries that come coated with coalho cheese foam for dipping.
