Barring the fish dishes, the food in the Pantanal is neither as interesting nor as flavorful as that found elsewhere in the country. That said, the food is hearty, and the meals are large; affordable all-you-can-eat buffets are everywhere.
Frenchman Daniel Brand's café has become a Brasília institution since opening in 1995. As well as the croissants and coffee for breakfast, it's the sumptuous cakes and pastries that keep customers coming back for more, year after year, at all times of the day. Try to get a table in the garden. Service can be slow.

This is one of the city's best options for visiting vegetarians and vegans. Run by South African Natasha Franco, A Tribo operates on a per-weight system, stocked with endless varieties of salads, pulses, and juices. Try the variations on Brazilian themes, such as acajaré with a vegan stuffing. There are also fish and chicken dishes, and regular days devoted to Indian cuisine. Get here early for lunch before the buffet runs out—it's popular.

A Cuiabá institution since 1974, this open-air eatery is always packed and is the best place in town to go for ice-cold beer and local specialties. This is the place to sample escaldado cuiabano, a local chicken soup.
