Ascending 10,450 feet might seem like an extreme length to go to in the pursuit of waffle wonderment but this is no mere Eggo we’re talking about. Indeed, stopping at Corbet’s Cabin to sample one of their famous waffles has become something of a tradition for skiers on their way down, hikers on their way up, or breakfast enthusiasts on a mission.
The waffles are made to order and come in four varieties. A deceptively modest number when you consider how difficult it is to choose just one set of toppings. “The Gateway” comes with peanut butter and bacon, the “Italian” comes with Nutella and strawberries, and the “Englishman” comes with lemon glaze, powdered sugar, and whipped cream. But you can’t go wrong with the understated and straightforward “Trad” (a little bit of brown sugar and butter goes a long, long way). They’re served on a humble sheet of tinfoil that you dig into sans utensils.
It’s difficult to say what it is that makes these waffles so good—and so impossible to recreate at sea level. They’re light, yet cooked to a perfect golden crisp, with a melt-in-your-mouth exquisiteness. Maybe it’s the altitude. Maybe it’s the joy that comes with pairing a delicious breakfast treat with a jaw-dropping view of the snow-laden mountains and the largely untouched expanse of the valley below. Either way, you’ll have a tricky time ever appreciating your local diner’s waffles again.
