Set in an adorable Wallingford storefront with graphic decor and an open kitchen, Joule is a true feast for your senses. Happy, casual Wallingford diners fill this bright space to feast on Chefs Rachel Yang and Seif Chirchi's exciting take on French-Korean fusion. The menu is divided into playful sections, including Simmered (such as spicy beef soup); Tossed (Japanese greens with Asian pear, Rogue blue cheese, and walnut agrodolce); Crisped (including Kimchi and trotter dumplings or braised cucumber, Chinese sausage, and shiitake); and Sparked (incredible whole branzino with salted shrimp fricasse; Kasu-brined pork chop; and Bison hanger steak with preserved garlic). The best approach is to order family-style so that you can try several dishes. You may not have room, but desserts are equally fascinating, such as a "Joule" box with tapioca pearls and ruby grapefruit brûlée.
