The cocktail-shaking wizards here are Don Lee and Dave Arnold (from acclaimed spots PDT and Booker & Dax, respectively), who use methods like centrifuging and pressure cooking to concoct very drinkable—and fun—libations, such as a carbonated margarita with clarified strawberries and a waffle-infused bourbon drink spiked with maple syrup.
