Racines is located inside an old, long, and narrow diner that's been renovated into a sophisticated and gorgeous new space that is reminiscent of a light box. The tone is set with glazed walls, tan-colored banquettes, vintage chairs, and a lot of warm wood panels. Young chef Simon Mathys hones his craft in the open-air kitchen in the back with an innovative menu of small plates to share, including the agnolotti with rabbit and squash or the scallops with endives and apricots. The raw foie gras with meringue shards is a balanced mélange of sweet and savory, smooth and crunchy. The menu changes often but features mainly local ingredients that are assembled with as little transformation as possible and in surprising combinations.
