Memphis-style barbecue is the name of the game at this popular, self-serve spot owned and operated by a champion pit master honing his skill behind the smoker and Missouri-imported barbecue pits. Pork, brisket, chicken, and ribs all get a secret-rub treatment and are then cooked slowly for up to 16 hours. Try the excellent braised greens or the top-notch "burnt ends" poutine topped with charred, fatty, and smoky bits of brisket. Blackstrap uses meat sourced from local Québec farms.
