The traditional atmosphere (flowered wallpaper, beamed ceilings, red-and-gold chairs) at the Tschuggen Grand Hotel's centerpiece Michelin-starred restaurant gives no hint about the ultramodern and imaginative dishes deftly prepared by the kitchen. Mainly Swiss ingredients, along with a smattering of Asian flavors, are combined and presented in unexpected ways; for instance, even a simple-sounding farmer's salad includes olive oil ice cream. Diners can sample these interesting plates with tasting menus that include from two to five dishes. The wine list is encyclopedic (and incredibly expensive), and will please those looking for rare vintages.
