This upmarket café-restaurant, located 19 miles west of Dornoch in a modish wood-and-glass (and subtly salmon-shaped) building, serves deliciously meaty dishes, often using venison from deer hunted at the co-owner's nearby estate. It's also a two-minute stroll from the Falls of Shin, one of the Highlands' best spots to see wild salmon leaping upstream in the summer. If you fancy a taste of the patented smoked salmon gin, there's overnight accommodations in the form of treetop tents.
