A relative newcomer to Edinburgh's dining scene, Fhior seems here to stay. Owner and chef Scott Smith, who previously ran the award-winning Norn, serves up seasonal, Scandinavian-inspired fare with rare Scottish ingredients, from beremeal (an ancient form of barley) bread to sea buckthorn. The decor is similarly Scandi-minimalist (almost austere), with plenty of plain white walls and wood veneer. Choose from four or seven courses for dinner, with menus arriving sealed in envelopes; you're encouraged to trust the chef and leave them unopened until after dessert. Considering the level of complexity and creativity on offer, the four-course meal for £40 is a steal.
