Named for the Felix Meritis cultural center in which it resides, a "home for the curious mind," this restaurant, which opened in January 2020, aims to reward culinary adventurers with a modern take on Dutch cuisine. With its soaring ceilings and stunning canal views, the understated decor of this 18th-century dining room subtly references the style rooms of the Dutch Golden Age. Choose from Floris van Straalen's three- or five-course chef's menu for lunch, or between four to seven courses for dinner, and let the journey begin. The wine pairing is worth the splurge, because sommelier Saskia Smeenk is one of the best and brightest in her field.
