When dining out in the Dolomites, it’s evident you are in a part of Italy that was once part of Austria-Hungary. Although you can still find traditional Italian pasta and pizza, in this region there's a considerable amount of Austro-Germanic flair. Sausages, spaetzle, meats, cheeses, and polenta—foods that will sustain the body through a long day of skiing or hiking—can be found on nearly every menu, although you'll also find more contemporary restaurants using seasonal ingredients in a lighter style. Many restaurants either raise their own crops and livestock, or have a direct relationship with their farmers and providers.
