Four different kinds of rotoli (rolled, stuffed mozzarella) are available; the one with smoked salmon and arugula is particularly tasty. You can pair your cheese with a number of accompaniments, including caponata (a Sicilian eggplant mélange) and mortadella from nearby Prato.
