The Falorni family has been in the butcher business since 1806 in Greve in Chianti, and mercifully decided to open a small trattoria in Florence's centro storico. Two small rooms in a medieval tower seat about 25 people. This is Tuscan food served at its absolute best. They do steak tartare five different ways, serve sandwiches featuring their delicious cured pork products, various crostini, and cutting boards (comprising meat and cheeses). You could also sample Le Ricette della Nonna Beppa (Grandma Beppa's Recipes), which include a fragrant il lesso in salsa verde (various boiled meats served with salsa verde and pickled onions). It's open from noon to midnight—a rarity in Florence.
