Chef Dimitri Droisneau may profess his cuisine to be humble, but his two–Michelin star menu—studded with standouts like delicately grilled Mediterranean rouget with almonds and fennel and drizzled lightly with an urchin-and-saffron sauce—merits a change out of your beachwear (closed-toe shoes are required). Droisneau and his wife Marielle took over La Villa Madie in 2014, and he earned the restaurant a second star within a year. Overseeing a cellar boasting 550 wines, regional and beyond, sommelier Lionel Legoina can suggest an accompaniment for the two menus (€95 and €145) or the pricier route of à la carte orders. You cannot leave without sampling the exquisite Citron, and you may never be satisfied by just any old lemon pie again.
