Retired farmer Claude Brodard began building his chambres d'hôte (bed-and-breakfast) in an old stable, bucolically enshrined just south of Auxerre, more than 20 years ago, and the cozy, comfortable, reasonably priced rooms overlook his fields. Château de Laborde is the smallest, sunniest, and most intimate room. Homemade preserves—cassis, quince, and carrot—are served at breakfast.
