Cocktail making has been turned into an exact science at this stark Hoxton bar, with everything made in-house and all ice, perishables, and visible liquor brands outlawed to ensure that drinks turn out perfectly every time (they're chilled ahead of time). It's fascinating to watch the bartenders at work over their digital scales (they're more exact than spirit measures), using eye-droppers and spritzing bottles to add precise quantities of unusual ingredients like blueberry vinegar or lager syrup. It sounds pretentious but manages not to be, and the results are delicious. Over 21s only.
