With tables exotically set within a mature palm grove, Coco Bistro is one of the most popular restaurants on Provo. Main courses combine continental dishes with a Caribbean flair, and seafood abounds. Be sure to try their Caicos lobster bisque; it’s flambé style with cognac and a hint of spicy cream. The roast rack of lamb with an herb crust is also amazing. This is a must-visit, so be sure to make reservations at least one week ahead during nonpeak season, two to three weeks ahead in peak season.
