Tucked away in the stylish O:live Boutique Hotel, the cuisine at O:liva is a tribute to the coastal towns of the Mediterranean. The small, rustic chic dining area with wooden accents has an open kitchen and an array of artisan olive oils hanging on the wall. Chef Nicolas Gomez is a huge advocate of the farm-to-table movement and he utilizes the freshest local ingredients to complement his dishes. Whether its French, Moroccan, Italian, Spanish you will be transported to the Mediterranean without leaving your table. Start with the roasted korobuta on a sweet gorgonzola risotto and the foie gras with organic pumpkin marmalade. Then its up to you whether you want to visit Italy and sample the gnocchi with creamy pistachio pesto or head to France for the duck breast.
