The name means "jellyfish," which explains why this ultramodern place has dim blue lighting and jellyfish-shape lamps floating overhead. Eating here is like being submerged in the sea. The extensive, ever-changing menu by Chef Hector Crespo features inventive ceviches, including truffle tuna tartare with cucumber and green apple. For something more filling, try the lobster yuca gnocchi or orzo paella, with generous seafood, chicken, chorizo, and a saffron beurre blanc—oh-so-tasty and enough for two. Another splurge, the gravity-defying torres del mar (towers of the sea) comes hot or cold and includes oysters, mussels, shrimp—you name it. The oysters Rockefeller alone are worth the trip.
