The food at this restaurant, named after the Scotch bonnet pepper called Madame Janette in Aruba, is surprisingly not Caribbean spicy but French-inspired from the classic haute cuisine–trained chef. Though they do fuse Caribbean flavors when they see fit, especially in the fish and seafood dishes, you’ll find a lot of classic heavy butter-and-cream-sauce offerings for the meats like peppercorn cognac, béarnaise, and hollandaise. They have Aruba's largest selection of specialty beers due to one co-owner's avid interest in craft brewing. They also have a surprising number of specialty schnitzels. The commitment of the owners to serve only top quality in all of their offerings has won Madame Janette many prestigious culinary awards.
