Once the bastion of fine French cuisine on the island, Chez Matilde has returned to its roots, after an ill-advised attempt at modernization, to reclaim its throne as the ultimate French eatery on Aruba. The elegant interior and courtyard are, once again, the backdrop for such standards as bouillabaisse and Dover sole meunière. The setting is romantic and the quality of the food is always excellent. Although the service is usually low-key and attentive, busy periods can sometimes result in erratic standards. The restaurant is in one of the oldest private buildings in the capital, and after a few hours of dining on classic French cuisine, it's easy to forget that the modern world awaits outside. The bar at the entrance is popular for cocktails and people-watching.
