French and Asian flavors blend delightfully at this glamorous, century-old Victorian mansion turned eatery, which has collected some prestigious awards in recent years. The wine list is the stuff an oenophile dreams of, and the Burgundian-born chef uses the finest Australian produce to create such new classics as wild kingfish with a bread nougatine, Iberian ham, and saffron espuma, or tender octopus and dried miso, green pea and ginger dressing. The eight-course degustation menu (A$175), which can be paired with wines (A$270), is justly famous; there's a vegetarian degustation menu too. You can also choose a three-, four-, and five-course menu (ranging from A$105 to A$160). Single à la carte dishes are not available.
