When dining in Brunei keep in mind that it's not about indulging your every culinary whim, but discovering a rich and varied regional cuisine refined over centuries. Infected with flavors from neighboring Malaysia and Indonesia, dishes make abundant use of spices, herbs, and tropical fruits like coconut and lime. Rice and noodle dishes are common, as is the signature local dish ambuyat, a sticky starchy porridge that takes its flavor from a range of accompaniments. Fish is very common, but beef, and especially pork, are rare. Alcohol is not consumed in Brunei, as it is prohibited by sharia law.
