A vast modern space in the Waterfront's One&Only resort provides a fitting backdrop for the splurge of the Omakase multicourse tasting menu, which will likely include dishes such as the signature Alaskan black cod with miso. Service is gracious, and the selection of sake and local wines is stellar if costly by local standards.
