Fassi cuisine originated in the fondouks (traditional inns) where people from numerous cultures—Andalusian, Indian, and Persian among them—crossed paths, and you’ll start by choosing a menu of salad, main course, and dessert. Then shop for ingredients in the souk with one of the café’s Moroccan chefs before rustling up everything from tagines to couscous in the kitchen—or on the roof terrace for larger groups—and sitting down to enjoy the fruits of your labor.
