A kibbutz that produces tasty hard and soft sheep's cheese runs the Nachshon Winery, near Latrun. The shop sells red wine and close to a dozen different cheeses. Drop in to the shop or call in advance to arrange a tour of the winery, vineyard, and ancient winepress.
