NEED HELP HELP - Leaving in 3 weeks - February in Moderna + Sicily

Hi - We are spending 3 Days in Parma/Moderna and 4 Days in Sicily in February and need help with feedback on itinerary. We've been to Italy last year and did the traditional place (Venice, Rome, Tuscany, Pompei, Naples). We travel a bit like roadwarriors seeing and experiencing as much as possible in the time we have so to that end. We love food, history, wine and we have been to Italy several times/ We have two pre-teen kids who also love food but enjoy the occasional vespa tour too. So kinda nutty below but here goes.

Moderna / Parma / Bologna - we woudl spend 3 days exploring these areas. We are hoping to do Parma Cheese Tour, Ham Tour, and Vinegar Tour while there. Also visit Mercato Albinelli. We love Agrotourism farm stays but its cold and not sure if it woudl be worth it? Can we train to most of these places vs. taking a car? How is driving in those cities?

Sicily / Catania - Where I need help. We woudl fly to Catania and rent car. We were thinking of using Taormina as our base of operations and doing day trips but maybe Catania is better? We wanted to hit a winery in Etna, the ruins in Taormina, and maybe Syracuse/Ortigia We are fine spending a night here and a night there esp if we have a car and are driving. My biggest concern is we are coming in low season and winter so we are not looking for snowhiking necessarily or skiing but just taking in the cultural sites.

2/21 Fly to Catania - land at 8AM - Rent Car - Day in Taormina (Ruins)
2/22 Day in Etna (Winery and Gorge - is it worth it in the winter)
2/23 Day in Syrause
2/24 Day in Catania - leave Sicily evening and fly to Verona
