Road Trip-Tampa to Texas(Areas of attractions)

Hi
We are planning for a road trip from Tampa to Texas..we are planning one night stay in the hotel and continue the trip on the next day. We would like to know the areas of attractions to cover in-between.Please advise.

New Orleans is going to be the biggest one, especially Bourbon Street.

New Orleans is definitely worth a few days. There are wonderful historic houses all around the neighboring areas.
Talladega National Forest makes for a pretty drive in Alabama. There are some scenic waterfalls to hike to as well and the sky drive.
Destin
Cedar Key
When you're in and around Tampa check out: Dali Museum, Busch Gardens, Big Cat Sanctuary, Sunken Gardens, The Florida Aquarium, Fort De Soto Park, ZooTampa at Lowry Park, Botanical Gardens, Clearwater Marine Aquarium, and Museum of Science & Industry (MOSI).
If you're going further out within a 2-hour radius there's Bok Tower Gardens, Weeki Wachee Spring, Tarpon Springs, Crystal River to swim with the manatees, Ringling Museum in Sarasota,
For nice beaches: Honeymoon Island State Park in Dunedin, Fred Howard Park in Tarpon Springs, Siesta Key, Captiva, and Sanibel
Doc Ford's Rum Bar & Grille is a good restaurant in St. Pete on the pier

But if you intend to have only overnight stays while traveling between Tampa and (where in?) Texas, New Orleans, like any other big city, might be too much.
